Homemade Tomato Sauce

Serves 4
400g canned tomatoes

½  onion, finely chopped
1 clove garlic, crushed
 ½ cup water
2 teaspoons parsley flakes or 2 tablespoons freshly chopped parsley or mixed herbs

Cook all ingredients together in a small saucepan or in the microwave.  Serve hot in a chunky style or mash, sieve or blend for a smoother sauce.
Serve with pasta, add cooked chicken or ham, add mixed herbs, or pour on chicken breasts and top with cheese.

Freeze leftovers.
Use for pizza sauce
Cut up the rest of the onion and freeze
Use bottled garlic
Chop up parsley and put in ice cube tray with a little water for use another time
